w/Sunflower Seed Buttercream!

NOTE: Recipe makes about 24-35 fries!

(Peanut Free, Gluten Free, Vegan)


  • Favorite Gluten Free Vanilla Cake Mix

  • 2 Tbs. butter or vegan butter

  • ¼ cup brown sugar

  • 4 bananas, sliced

  • 1 Tbs. vanilla extract

  • Frosting:

  • 1 cup shortening

  • ½ cup vegan butter

  • 3 cups powdered sugar

  • ¼ cup dairy-free milk

  • 2 Tbs. vanilla extract

  • ½ cup sunflower seed butter


  • Preheat the oven to 350°.

  • Make “banana foster” – melt butter in a pan.  Add sugar into the pan and stir. Add sliced bananas to sugar butter mixture and saute. Cook until caramelized. Once cooled, add in vanilla extract.

  • Make the cake batter according to box directions.  Fold in the “banana foster”.  Bake according to box directions and set aside to cool.

  • To make the frosting: mix the vegan butter and shortening with a mixer until smooth. Add in sunflower seed butter and vanilla extract. Mix until combined and smooth.

  • Slowly add in the confectioners sugar and mix to combine until smooth.

  • To assemble: Fill a large ziploc with the frosting and fold over the top to make a triangle. Cut off the corner and pipe the frosting onto the cooled cupcakes.
