MONICA'S APPLE PIE ENERGY BITES

Ingredients:

½ cup shredded unsweetened coconut, divided

¼ cup coconut oil

1/3 cup sunflower seed butter

2/3 cup Gluten-free oats, ground to a crumbly flour in a food processor (or regular oats if not gluten-free)

½ cup unsweetened applesauce

1 tsp vanilla extract
-
1-2 tsp apple pie spice

1 Tbsp. ground flaxseed

Directions:

In a medium bowl, add coconut oil, sunflower seed butter, applesauce, vanilla extract, and apple pie spice. Mix until combined.

Stir in ground oats, ¼ cup shredded coconut, and ground flaxseed.

Using a small cookie dough scoop, portion the batter into individual balls. The balls will be soft and a little sticky.

Place the remaining ¼ cup shredded coconut into a shallow bowl and roll each ball in it to coat.

Place the balls on a plate and put in the refrigerator until lightly hardened, about an hour or so.

Store the balls in a covered container in the refrigerator.
