Monica's Original Recipes!

  • Ingredients:

    • ½  cup shredded unsweetened coconut, divided

    • ¼ cup coconut oil

    • 1/3 cup sunflower seed butter

    • 2/3 cup Gluten-free oats, ground to a crumbly flour in a food processor (or regular oats if not gluten-free)

    • ½ cup unsweetened applesauce

    • 1 tsp vanilla extract

    • 1-2 tsp apple pie spice 

    • 1 Tbsp. ground flaxseed

  • Directions:

  1. In a medium bowl, add coconut oil, sunflower seed butter, applesauce, vanilla extract, and apple pie spice.  Mix until combined.

  2. Stir in ground oats, ¼ cup shredded coconut, and ground flaxseed. 

  3. Using a small cookie dough scoop, portion the batter into individual balls. The balls will be soft and a little sticky. 

  4. Place the remaining ¼  cup shredded coconut into a shallow bowl and roll each ball in it to coat. 

  5. Place the balls on a plate and put in the refrigerator until lightly hardened, about an hour or so. 

  6. Store the balls in a covered container in the refrigerator.
